On the menu: 🍴Spaghetti squash (local), roasted with olive oil, salt and pepper. 🍴 Broccoli (local), roasted with olive oil, paprika, garlic powder and parmesean. 🍴 Chickpeas, roasted with paprika, garlic powder, cumin, and salt. . Portion all ingredients intro meal-sized containers and refrigerate. I also topped each meal with some feta cheese (not pictured). . Is meal prep important? 🤔 The answer to this question depends! Are you a busy working parent with little time to spare? Having a few snacks, side dishes, or meals prepared in advance saves time and energy so you can concentrate on other aspects of your routine! Are you cooking for one or two? If you are, you may have leftovers... so plan for this and save a portion of your food to enjoy the next day. Is cooking a new daily meal/recipe a chore? It's good to have a few meals prepped for when cooking isn't your number one priority! . I do not meal prep all my meals because I like to enjoy variety in my diet 🥦🍓🥐🥓🍣🥗🥞🍳🥧. Tonight's dinner is a baked falafel salad with a special ingredient. I finally got my hands on some @libertycannabis cannabis infused olive oil (I'm a medical cannabis patient). The salad base is 5 cups mixed greens. The falafel is 1.5 cups mashed cooked chickpeas, 2 tbsp chickpea flour, 1 clove garlic, cilantro, cumin, onion powder, black pepper, and pink salt. Bake the falafel on baking sheet with infused olive oil (or regular) for about 20 min at 400 Fahrenheit. The cooked veggie mix is 1 chopped red bell pepper, 3/4 cup chopped onion, 1 clove garlic, 1 tbsp infused olive oil (or regular) cilantro, onion powder, cumin, pink salt, and black pepper. The quinoa is 1/4 cup dry quinoa cooked in water with cumin, pink salt, onion powder, and black pepper. The hummus is 3 tbsp @sabra lemon twist hummus. I also added 1 chopped cucumber. Like most vegans I get a little excited when I’m grocery shopping and find new vegan products on the shelf or if I’m dining out and find vegan options on the menu. 🌱😂🌱 * I need to dial it back and carefully read those ingredients or do a quick Google search to verify. Also need to wear my glasses 👓 so I can tell the difference between V for vegan and V for vegetarian on the label. 🌱🤔🌱 * A couple of times I thought I was buying vegan products that ended up containing egg whites or dairy, which I returned or gave away. So I definitely need to be more diligent. Just keeping it real folks. Read those labels and do that research. 🌱Plant-Based🌱on the package does not always equal Vegan. Day 1: WHERE’S MY STEAK? It’s gone. I went to @wegmans today even though I have to drive 20-25 min to get there because let’s be real—their selection is amazing. Especially since I have no @sprouts or @traderjoes ANYWHERE near me and Whole Paycheck aka Whole Foods is 30-45 min away depending on traffic. I plan on fully making my dinner later this evening but wanted something easy for a late lunch (I skipped breakfast...bad Ali!). Here I have some Asian rice w roasted veggies n seeds, a ginger flavored farro n quinoa mixture, and some kind of Asian flavored tofu n mushroom mixture. I apologize I really should’ve remembered the actual names of these but alas, I have forgotten. Week 2 🌱 Almost a rest day today as I only did yoga in the morning and treated myself to a massage 💆‍♀️ as I was unable to move (the DOMS were real!! I actually couldn’t walk properly today and yesterday) I enjoyed a tofu scramble with a cheeky vegan sausage and avocado hummus and cherry tomatoes on toast 🤤🥰 all of this for breakfast but I’m not a big snacker so I’ve been adapting my meals accordingly 🥑 Oh and of course A COFFEE!! ☕️ . Btw I’m gonna talk about mental health now so (cw: anxiety if anyone doesn’t want to read about that today 💖) The yoga this morning was great, especially since I got to do it in my own living room, BUT I went to a really hard class last week and it was such a disappointment. I didn’t expect it to be that hard or dynamic because I haven’t taken that teacher’s class before. The teacher kept correcting my poses while I was doing what I thought was the absolute best I can, considering I’ve been practicing yoga on and off for years. I just kept failing to do things properly and in time for the first twenty or so minutes of it, i got really anxious, almost cried and really wanted to storm out of the room! I put myself in child’s pose for a moment and gave myself a pep talk to make the best out of the second part of the class and not give up. Long story short I finished the class, didn’t do much better but at least I managed to let go of my anxiety a bit and focus on my flow! Now if anyone wants to walk out of a class I think they should absolutely be allowed to, especially if they’re too anxious (I’ve done it before!), that’s not the point of the story. But yoga does teach us to focus on our own practice and taking our form and our bodies as they are, without judgement. Hope we can all do that in the 8-week challenge and in general 🥰 . Vegan Pumpkin Coconut Curry Bowl 🎃 (with tofu, honeynut squash, and plenty of veg) . Working on upping my fat intake because my appetite is OUTTA CONTROL sometimes 😂 The high carb meals don’t always cut it for me, so adding in some healthy fats are super beneficial. . . This meal is simple, delicious, and super filling! Plenty of protein (from tofu), healthy fats (from coconut milk and tofu), complex carbs (from squash and pumpkin), and as many veggies as your heart desires! . ➡️Simple Pumpkin Curry Recipe 1️⃣Roast squash or sweet potatoes in the oven; I cubed my farmers market honeynut squash and baked for 35min @ 400° (flip halfway) 2️⃣Drain, press, then cube your tofu. Place in the air frier for 15-20min @ 370° 3️⃣Place your veggies to a pan (I used broccoli and cauliflower) with 1/3c of water, place the top on, and steam for 5-8min. 4️⃣Add 1/4c of coconut milk, 1/4c pumpkin purée, and 1/4c tomato/marinara sauce to your pan, turn the heat down, and all the sauce/curry base to thicken 5️⃣Lastly, add you air fried (or baked) tofu, and baked squash to the curry mixture! . *Feel free to triple/quadruple the recipe for meal prep; also if you like a saucier curry, add extra coconut milk Смотреть полностью

Oh I do love a bit of improv! I'd planned on doing my super speedy tahini and soy mushroom pasta dish for dinner as I've been out running with @goodgym and frankly food needs to be quick. However and OMG I'm out of nooch (nutritional yeast) which is nothing short of disastrous so improv was needed. Quickly str fried mushrooms with ginger, chilli and garlic then stirred in about 1/4 cup of tahini, approx 4 tbsp soy sauce, 3 tbsp lemon juice, 2 tbsp maple syrup and thinned out with a bit of water. Today starts my new sojourn into eating a plant-based diet. I am not against you eating meat or other animal products—just being real here. In fact I was paleo for the last 4 years and did well with it. I’m not calling myself “vegan,” because in my opinion, that is more of a lifestyle of not accepting any animal products in your life, whether that be food or other goods like leather. I’ve been researching this for a while and made the decision to switch to plant-based food for personal health reasons. It will be interesting to see how this goes! I’ve saved a ton of recipes on Pinterest and here on IG to help me get started. •GOCHUJANG - LITERALLY THE BEST THING EVER MADE 🌶• I’ve made a spicy Korean mushroom and tofu stir fry which totally hit the spot this evening 🔥. It’s a fermented hot pepper paste and if you like spice, I recommend you try and get hold of some (most supermarkets stock it). .. Tofu has a bad press, but you know I’ve always been a fan. It’s a versatile plantbased source of protein and it soaks up all the flavours around it and I think it’s perfect in this dish. My friend @plateful.health covered some of the misinformation surrounding soy products yesterday on her page, so do check it out if you’re interested. .. In the meantime I’m going to leave the recipe right here 👇 for you. Go on, spice up your life 🌶🌶🌶 .. Recipe 200g mushrooms 200g extra firm tofu, drained and pressed and cut into cubes 3 cloves garlic, minced 1 tablespoon honey/maple syrup 2 spring onions 1 teaspoon soy sauce 1-2 teaspoons of gochujang .. 1. In a non stick wok, heat a tablespoon of oil and fry the tofu till crispy. Remove from the wok. 2. In the same wok add the garlic and cook for 2 minutes, then add the mushrooms, lower the heat and cook until they’re soft. 3. In a small bowl mix the gochujang, soy and honey/maple syrup, pour into the pan with the tofu and mushrooms (add a splash of water if necessary) and sprinkle over the spring onions. HOW MUCH PROTEIN IS TOO MUCH? ⠀⠀⠀ ⠀ By now we all know about the benefits of protein. Protein provides the building blocks for new cells and is essential for maintaining a healthy body composition. Without protein you wouldn’t be here reading this caption. But as with everything you can have too much of a good thing. ⠀⠀⠀ ⠀ 🍏 If you are not particularly active and are simply interested in general health and well-being then there is little need to follow a high protein diet. A daily intake of 1g - 1.2g of protein per kilogram of bodyweight is plenty. ⠀⠀⠀ ⠀ 💪 If you are training hard and regularly breaking down muscle tissue your protein requirements will be higher. All do the research shows that a daily intake of 1.4g - 1.6g is optimal for muscle growth, providing you are also consuming a surplus of total calories. ⠀⠀⠀ ⠀ 🥗 If you are in a caloric deficit and looking to preserve muscle mass you may need to go as high as 1.8g per kilo of bodyweight per day, but there is absolutely no need to consume any more than that. Any extra protein that cannot be absorbed will simply be converted into glucose, so you may as well consume those extra calories from carbohydrates instead. ⠀⠀⠀ ⠀ ❌ Simply eating MORE protein doesn’t always mean MORE muscle. Despite what most supplement companies want you to believe, protein is not magic and you do not need to consume hundreds of grams each day to get results. ⠀⠀⠀ ⠀ P.S: along with your total 𝘲𝘶𝘢𝘯𝘵𝘪𝘵𝘺 of protein you should also prioritise 𝘷𝘢𝘳𝘪𝘦𝘵𝘺 of protein too. RECIPE (~2-3 servings)⁣⁣ Ingredients:⁣⁣ 230 g cooked chickpeas⁣⁣ 300 ml coconut milk, full fat & unsweetened⁣⁣ 200 g tomatoes, roughly chopped⁣⁣ 1 red onion, sliced⁣⁣ 1-2 garlic cloves, minced⁣⁣ 1/2 - 1 lime, juiced⁣⁣ 1 tbsp garam masala spice blend⁣⁣ 1 tsp yellow curry powder⁣⁣ 1/4 tsp cinnamon powder⁣⁣ salt & pepper to taste⁣⁣ ⁣⁣. METHOD:⁣⁣ - sauté sliced onions in a pan with a little bit of water, when almost translucent, add garlic, tomatoes and all spices, fry for another minute while stirring.⁣⁣ - Add chickpeas and coconut milk, mash some of the chickpeas with a wooden spoon for a thicker and creamy sauce. I generally get each of them in the roasted versions because it adds to the flavor. Each brings their own unique flavor and varying levels of macros (⏩⏩swipe to see!). I buy most if not all of mine at ALDI of course. You can toss them in salads, green mixes, oatmeal, or throw them all together and add raisins/craisins to create you own trail mix! I'm busy, I'm hungry, feed me now. The nutrient profile is awesome with 25% of your folate requirements, 10g protein, 10g fibre, all of your Vitamin K and Vitamin C, and a great range of B Vitamins and Minerals too. 1 Tablespoon Extra Virgin Olive Oil 1 Can Butter Beans 2 Cans Mixed Beans 1/3 Cup Soy Sauce 2 Heads Broccoli 2 Red Peppers Sautee everything together then simmer on a low heat for 10 minutes.
